INGREDIENTS
1 and 1/2 cups of almond flour
2 tablespoons of coconut flour
2 tablespoons of flaxseed
5 eggs
1/4 cup of coconut oil (melted)
1 and 1/2 teaspoons of baking soda
1 tablespoon of apple cider vinegar
1 medium/large zucchini (grated)
1/2 cup of pumpkin seeds
Pinch of salt
DIRECTIONS
Pre-heat oven to bake 170.
Mix all ingredients together in your food processor or a large bowl (if you mix by hand whisk your eggs in a separate bowl before combining with other ingredients).
Bake for 35 minutes - or until top of loaf is golden brown.
Leave to cool before serving.
