With Christmas fast approaching Christmas themed recipes are on the cards. At primary school I always used to give my teachers fudge wrapped in cellophane with a cute card, bearing that in mind, I’ve created a paleo friendly version. Hello health conscious Christmas!
INGREDIENTS
6 tablespoons of peanut butter (you could use almond)
3 tablespoons of coconut oil (melted)
3 tablespoons of cacao or cocoa powder
3 teaspoons of maple syrup
1 teaspoon of vanilla essence
3 tablespoons of shredded coconut
10 dates (chopped and soaked for 10 minutes)
DIRECTIONS
Chop dates into small pieces and soak in a bowl of hot water for 10 minutes.
Combine all ingredients in large bowl or food processor and mix well.
Pour mixture into a lined small container (I used a plastic 100grams lunch box).
Place in the freezer to set for 2 -3 hours.
Just before serving put the fudge in the fridge to soften and slice into bite sized pieces.
Return leftovers (if any) to the freezer.
