INGREDIENTS
1/2 cup of coconut flour
3/4 cup of almond flour
2 tablespoons of honey
1 ripe banana
2 eggs
1 teaspoon of mixed spice
1 teaspoon of vanilla essence
Pinch of salt
1/2 teaspoon of baking soda
1/2 cup of olive oil (coconut oil would work)
1 cup of shredded coconut
2 tablespoons of cream
DIRECTIONS
Blend everything together in your food processor, roll into balls and flatten on a lined baking tray.
Bake for 25 minutes at 180 and leave to cool, allowing the cookies to harden.
