The big report for my post graduate diploma is due in a few days, so I’ve been procrasta-baking!!! Using the ingredients I had on hand I made this deliciously moist, yes moist, paleo banana bread.
INGREDIENTS
1 cup of almond flour
1 tablespoon of coconut flour
1/4 teaspoon of baking powder
1/4 teaspoon of salt
3 eggs
2 tablespoons of raw honey
2 tablespoons of coconut oil (melted)
3 ripe/over ripe bananas
1 teaspoon of vanilla extract
Extra banana for decorating.
DIRECTIONS
Mash bananas and combine ingredients in your food processor (or mix by hand).
Pour mixture into a lined loaf tin.
Top with sliced banana.
Bake at 180 for 30-40 minutes, you’ll need to keep a close eye on it.
