Chocolate, chocolate and more chocolate. There is something about combining dark chocolate and banana that makes a yummy natural sweet treat. I made this for a shared morning tea at work, and people had no idea that they were a “healthy” treat. So easy, if you’ve got some banana’s sitting on your bench and don’t know what to do with them - here’s your answer.
INGREDIENTS
2 bananas
1 1/2 tablespoons of honey
1 teaspoon vanilla extract
4 eggs
½ cup olive oil (you can use melted coconut oil)
¼ cup full fat organic milk (use coconut milk if you like)
½ cup coconut flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
3 tablespoons cacao powder
2 cups of dark chocolate chips
DIRECTIONS
Preheat oven 180 on bake.
Combine everything together in food processor until smooth.
Evenly spoon batter into prepared muffin tin.
Bake muffins for 25-30 minutes
Let the muffins cool and remove from the pan and cool completely on rack - if you do this too quickly they will crumble.
