Tis the festive seasons so Christmas Cookies are a must!! These clean Christmas Cookies are a perfect alternative to your traditional biscuits and they look the part. I don’t know about you, but using cookie cutters takes me back to my childhood!
INGREDIENTS
4 cups of almond flour
1 cup of coconut oil (melted)
1/2 cup of maple syrup
1 egg
1 teaspoon of vanilla essence
1 teaspoon of baking powder
1/2 teaspoon of baking soda
1/4 teaspoon of salt
1/2 cup of cranberries
1/2 cup of shredded coconut
DIRECTIONS
Preheat oven to bake at 160.
Put all ingredients together in your food processor or a large bowl.
Mix until a sticky dough forms.
Roll out the cookie dough on a lined baking tray. You want the thickness to be between 1/2 - 1cm.
Use cookie cutters to shape cookies and spread evenly on tray (I used 2 trays).
Bake for 10 - 15 minutes, make sure you check these as they cook pretty quickly.
Leave out to harden for 10 minutes before serving.
