INGREDIENTS
2 eggs
1 cup of coconut sugar
Pinch of salt
1/3 cup of olive oil
1/2 cup of yoghurt (greek or plain)
2 cups of almond flour
1 and 1/2 teaspoons of baking powder
1 teaspoon of baking soda
2 mashed bananas
1 teaspoon of vanilla essence
Cream and a banana for topping (optional)
DIRECTIONS
Mix eggs, coconut sugar and salt.
Add olive oil and beat well.
Add yoghurt, bananas and vanilla essence and beat again.
Stir in almond flour, baking powder and baking soda.
Bake for 45 - 50 minutes at 170.
Pour mixture into a lined cake tin.
Leave to cool before topping with cream and a sliced banana.
NOTES
This recipe will also work for muffins.
